Cauliflower Pulao / Rice / Bhath


A quick, easy and flavourful pulao that goes perfect with any raita. This is a no onion no garlic recipe and is a delightful option on fasting days too. Cauliflower is considered to be very good for health.



  • 1/2 cup basmati rice
  • 1/2 cup fresh cauliflower florets 
  • 2 to 2 1/2 tbsp oil
  • 1 bay leaf, 2 to 3 black pepper, 2 cloves, 2 strands of mace,a stick of cinnamon,1 black cardamom
  • 1/2 tsp mustard seeds
  • 1/8 tsp asafoetida
  • 1/8 tsp turmeric powder
  • 2 tsp goda masala ( I have used ready goda masala)
  • Salt to taste
  • 2 cups hot water OR as required

To be ground to a paste without adding water the spices mentioned below

  • 1/2 tsp coriander seeds
  • 1/4th tsp cumin seeds
  • 2 cloves
  • 4 black pepper
  • 1/2″ piece cinnamon
  • 1 small masala velchi ( badi elaichi/ black cardamom)
  • 4 green chillies ( adjust to taste)
  • 4 sprigs coriander leaves


  • Wash the rice at least thrice to let go off excess starch. Soak in water for 10 minutes, drain water and keep aside.
  • First rinse the cauliflower under running tap water, then cut into small florets and add it to a little hot water to which a bit of salt and a pinch of turmeric is added. If you have vinegar at home then you could add 1/2 tsp vinegar in a bowl water and dip the florets in it for about 3 minutes. Drain the water, rinse the florets again so that the smell of vinegar does’nt stay and then the florets are ready to be used.
  • In a nonstick/ ceramic pan heat oil, add bay leaf, black pepper, mace, cinnamon, cloves,black cardamom,saute till you get its aroma, add turmeric powder, ground spices, saute well. Add the cauliflower florets and saute well till the spices coat the florets well and till a little crisp.
  • Add rice and saute well till the masala coats the rice. Add hot water and bring to a boil. When the rice is 3/4th done, add goda masala and salt. Cover and cook till done.
  • Serve hot with spiced curds or raita of your choice.


  • Cauliflower in its raw state has no smell as such but when cooked gives a strong smell,due to the compounds it releases when cooked. Hence here I have added more oil in the recipe to saute it with the spices, till a little crisp so that when cooked it minimizes the smell to a great extent. Also I have added khada masala including a bay leaf which again helps to reduce its smell.


  • Adding goda masala when the rice is 3/4th cooked adds to the flavour and aroma of the rice.
