Bottle gourd Halwa / Dudhi Halwa


We all love to savour on traditional home-made sweets and bottle gourd halwa is one among them. I’m posting my version of bottlegourd halwa and there are many versions to this recipe. 



  • 11/2 cups grated bottle gourd
  • 1 tbsp ghee
  • 10 tbsp milk
  • 100 gms grated khoya / mawa
  • 1/4th cup sugar ( adjust to individual taste)
  • 1/2 tsp cardamom powder
  • 1/8 tsp nutmeg powder
  • Almond slivers to garnish


  • Rinse the bottlegourd well. Wipe it clean, peel the bottlegourd with a steel peeler. Cut it into pieces so that it is easier to hold it, grate the bottle gourd lengthwise and grate only till you see the seeds, then move on to the other side. Grate with a steel grater and at the same time heat ghee in a nonstick/ ceramic pan, and as you grate the bottle gourd keep on adding it to the pan,if not it’ll start losing colour.Saute for 3 to 4 minutes. 
  • Add milk, mix well and cook till all the milk evaporates and the bottlegourd cooks.Add khoya and saute till it blends well. Add sugar and stir till it dissolves and till it dries up and till you get the right consistency. Add cardamom powder and nutmeg powder, mix well and garnish with almond slivers.
  • Serve hot or at room temperature, tastes great either ways. 


  • Always use a steel peeler, knife and grater while peeling, cutting and grating bottlegourd so that it does not lose colour immediately.


  • Do not include the seeds while grating bottle gourd. Grate only till you see the seeds and move on to the next side.
