Aloo Cheese Kulcha / Stuffed Leavened Flatbread


Kulchas are leavened flatbreads made with refined flour(maida). Traditionally cooked in a tandoor, they taste equally good when cooked on a tava / skillet.



  • 1 1/2cups refined flour (maida) + for dusting
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp sugar
  • 1 tbsp oil
  • 2 tbsp curds
  • Milk as required to knead the dough
  • Salt to taste
  • Oil for shallow frying the kulchas
  • Butter to smear the kulchas


  • 2 boiled potatoes, skin peeled and mashed well
  • 1 cube grated cheese( as per choice)
  • 3 green chillies and 1/3″ piece of ginger ground to a paste
  • 3 sprigs of coriander leaves chopped fine
  • Salt to taste


  • Sift together maida,baking powder,baking soda,and salt so that the dry ingredients are mixed well. Add oil, sugar and curds and rub it into the flour mix well. Add milk slowly and knead the dough till smooth. Apply oil and cover the dough with a damp cotton cloth and set aside for 2 hours.
  • Mix the mashed potatoes, grated cheese, ginger green chillies paste,salt and coriander leaves.
  • After 2 hours knead the dough well again by applying oil on the palms and make equal portions of the dough and roll them into balls. Cover them with a moist cloth and set aside for 10 minutes. Grease your palms with oil and flatten each ball.
  • Divide the stuffing into as many portions as the dough balls.Take one ball, cover the others with a moist cloth. Roll the ball of dough on a lightly floured rolling board, place a portion of the stuffing in the centre and pull up the dough around it so that the stuffing is covered. Seal the edges gently.There should be no gaps.Roll the stuffed ball in refined flour and sprinkle a little flour on the rolling board and roll the stuffed ball gently into a 4″to 5″disc.

To tava fry the kulcha :

  • Heat an iron griddle/ tava on medium heat and place the stuffed kulcha on it and cook it, turning it over and smearing it with oil on each side till brown specks appear on both the sides.
  • Smear butter on top and serve hot with yogurt and pickle. You could also sprinkle a little chat masala on top.
  • Prepare rest of the kulchas similarly.
