The use of suran or elephant foot yam is a regular in Maharashtrian cuisine and a very regular dish at my place is shallow fried yam. They taste simply awesome, of course they need to be served hot with simple accompaniments like rice, dal or sol kadhi or yes any tambli or karmana. Suran as it is called in marathi is a power house of nutrients, full of anti oxidants, heart friendly, promotes bone health, aids digestion etc. These are just to name a few. It is considered to be a magical vegetable, so do try and include the same in your diet. Many people avoid eating it since it may irritate the throat. A very good tip shared by the veggie vendor was to always select yam that is on the whiter side as the chances of it irritating the throat are very less. Posting a simple yet delicious shallow fried yam recipe below.

RECIPE :

Ingredients

  • 150 gms yam/ suran skin peeled and cut into thin triangular segments or any which way you like
  • A few drops of lemon juice to sprinkle on the suran
  • 2 tbsp rice flour
  • 1 to 11/2 tbsp coarse semolina/ rawa( I use upma rawa)
  • Salt to taste
  • 1/8 tsp asafoetida
  • 1/8 tsp turmeric powder
  • 2 tsp chilli powder (adjust to personal taste)
  • Oil for shallow frying

METHOD :

  • Peel skin of yam and cut into thin slices and soak them in water. Go in for light coloured yam as it does’nt have itching properties. However I do sprinkle a few drops of lemon juice since I’m prone to allergies.
  • Combine the mentioned dry ingredients well. Remove the yam pieces, tip off excess water sprinkle a little lemon juice as yam may have itching properties and irritate the throat. This does not change flavour of the fries, then coat them with the mix one by one, till they are well coated. Heat an iron tawa and place the yam pieces onto it.
  • Leave oil from the sides and cook them over low heat till golden brown. Flip over gently and fry till goden brown and crisp. Leave a little oil from the sides when they need replenishing. The yam pieces are done when golden and crisp. You could also check by pricking them with the tip of a knife. If it slides in easily they are done. This proportion serves 3 people.
  • Serve hot with dal rice or roti.

NOTE:

  • Adding coarse rawa makes the kaap crispier. Use rawa that is used to prepare upma.
  • Using an iron tawa gives crisp yam.
  • Keep the flame on low on the largest gas burner, since iron tawa gets real hot and the fries tend to get burnt easily.
