Come monsoon and I’m more into cooking different dals/amtis and kadis as the hot combination of piping hot dals with steaming hot rice is soothing to the throat. Drumsticks are easily available in the monsoons and they have a lot of health benefits.Try and include them in every possible way in your diet.
RECIPE 

Ingredients

  • 1/2 cup toor dal
  • 8 to 10 tender drumstick pieces of 4 inch length
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/8 tsp turmeric powder
  • 1/8 tsp asafoetida
  • 2 tsp kashmiri red chilli powder (adjust to spice required)
  • 11/2 to 2 tsp goda masala ( I have used ready to use goda masala)
  • 2 tbsp jaggery(adjust to individual taste)
  • 2 tsp tamarind pulp OR 2 to 3 kokum petals
  • 2 tbsp fresh grated coconut
  • 8 curry leaves 
  • Salt to taste 
  • Coriander leaves finely chopped to garnish

METHOD :

  • Rinse the dal well and soak it in water for an hour. This helps in reducing cooking time. Rinse again and pressure cook toor dal with 1/8 tsp turmeric powder and a pinch of asafoetida in the pressure cooker until pressure is released 4 times so that the dal gets totally mashed. 
  • Heat oil in a pan,add mustard seeds, when they splutter add asafoetida, saute and add the drumsticks, saute well then add water just enough to cook the drumsticks(approximately water level should be at the level of drumsticks).Tender drumsticks do not take much time to cook. 
  • Once cooked add cooked and mashed dal,water to get an even consistency. Add turmeric powder(a pinch), chilli powder, goda masala, tamarind pulp, jaggery, curry leaves, and salt and mix well. Bring to a boil and garnish with fresh coconut and coriander leaves.
  • Serve piping hot with steaming hot rice.

NOTE: 

  • Green chillies can also be added but I like the dark colour when kashmiri chilli powder is added. Also adding organic jaggery and tamarind pulp enhances the colour of the amti.
  • If you do not have drumsticks you can prepare it without its addition and this same amti is called goda masalya chi Chinch gulachi amti. The addition of drumsticks, peanuts is to increase its nutritional value.
  • In monsoons we get fresh groundnuts, you can add boiled groundnuts instead of drumsticks, tastes awesome. 
  • Adding turmeric powder while cooking the dal gives a nice colour to the dal.
  • The flavour of this dal is sweet, sour and spicy, adjust flavours accordingly.
  • While cutting drumsticks first rinse them, then cut off the edges, scrape off the skin a bit not totally. Rinse well and cut into pieces of desired lengtg.While buying drumsticks look for smooth green skin. The bumps on the drumsticks indicate where the seeds are. Select drumsticks with slight bumps, big ones indicate mature ones and they may be bitter and the seeds will be hard. Select tender drumsticks.
