Raw mango is one fruit that’s loved by almost everyone for its tart flavour.Raw mangoes have a lot of nutrtional value and are loaded with Vitamin C.They have started arriving the market and the first thought that came to my mind was instant mango pickle OR Karmat as it is called in Konkan. Karmat is a tart, spicy, instant raw mango pickle with a tinge of sweetness. This pickle tastes best when served fresh only, hence should be prepared for one time use only.
- 1 small tender raw mango
- Kashmiri chilli powder ( as per spice required)
- Jaggery to taste
- Salt to taste
- Wash the raw mango well. Pat dry the mango with a cloth. Cut off the top edge so that the sap if any is removed.
- Cut the raw mango into small cubes. Transfer to a mixing bowl,add chilli powder, salt and jaggery, mix well. The salt and jaggery will give out moisture.Instant pickle is ready to be served.
- This pickle tastes best when fresh, hence prepare in small quantities for instant use.
